
Apple & Sweet Potato Soup
ingredients
- 1 tbsp rapeseed oil
- 1 garlic clove, peeled and crushed
- 1 red chilli, deseeded and diced
- 1 tbsp madras curry powder
- 1 thyme sprig, leaves removed
- 1 small leek, diced
- 1 apple, cored and roughly diced
- 1 carrot, peeled and chopped
- 2 celery stalks, chopped
- 200g sweet potato, peeled and chopped
- ½ lemon, juice and zest
- 600ml prepared vegetable stock
- 200ml coconut milk

method
- Heat the oil in a pan add the garlic, chilli, curry powder, thyme, leek, apple, carrot and celery. Cook for approx. 10 minutes without adding colour.
- Add the sweet potato, lemon zest and stock, simmer for approx. 20 minutes or until all the vegetables are tender.
- Blend the soup, adding the coconut milk, until smooth.
- Season with the lemon juice and serve.
