- 1 aubergine
- 3 garlic cloves, peeled
- ½ lemon
- 1 tbsp olive oil
- Pinch of salt
- Freshly ground pepper
- Flat leaf parsley to garnish

method
- Preheat the grill. Prick the aubergine with a fork. Grill the aubergine until the skin is charred and blacked and the flesh feels soft when you press it (this will take approx. 15-20 minutes, turn throughout cooking).
- Meanwhile in a pestle and mortar peel & crush the garlic with the lemon juice, olive oil, salt and pepper.
- When cool enough to handle cut the aubergine in half and scoop out the flesh. Very finely chop the aubergine using a knife (don`t use a food processor) then fold through the garlic mix.
- Place in a serving dish and finish with a drizzle of olive oil and sprinkle the parsley over the top.
